Green Tomato Marmalade
This. As a woman (or man!) grows as a cook, they become known for certain signature dishes.
This would be mine…if I shared it with anyone.
I’m happy to share the recipe, but don’t come to my house looking for any, because I won’t share the actual marmalade.
I squirrel it away like some people do Girl Scout cookies.
I first found this recipe in a cookbook from the 1860’s The Virginia Housewife.
While I had to experiment to get the exact measurements right, the resulting spread is beyond anything I could have expected.
The sugar makes it sweet, the green tomatoes gives it a tart, deep, umami…if you try this recipe, you’ll need to plant some extra tomato plants just so you can harvest the green ones!

This post is making me SO excited for fresh summer tomatoes! We have a while here in the Northeast until they're ready, but when they are, it's go time on that egg and tomato tart, haha.
